I have an incredibly sweet tooth and this is my 1st attempt at a low-sugar recipe.
The original recipe is from the website http://www.mindbodygreen.com/0-15869/a-better-cookie-chocolate-oatmeal-chunkers.html submitted by Loren Brill.
I made changes to the original recipe
1) because I have a habit of doing this
2) I didn't have all the ingredients.
Here is my version.
CHOCOLATE BALLS
3/4 cup coconut oil melted
1 cup of Stevia powder
2 eggs
1/2 cup cocoa
1/2 teaspoon bicarbonate of soda
scant 1/2 teaspoon of salt
2 cups of oat flour
1 cup of oats
1/2 cup of plain chocolate chips or broken chocolate
1 ripe banana (optional)
Mix melted coconut oil with Stevia for up to 3 minutes.
Add eggs, mix in.
Add cocoa, soda, salt and mix on low until well blended.
Add oats and oat flour. To get oat flour, just blend the oats until fine.
Add chocolate chips.
Add mashed banana to give extra moistness to the mixture.
Roll into golf ball size pieces, place on baking sheet.
Bake at 350F/180C/gas 4 for 9-11 minutes until puffed and slightly cracked. If the banana is very ripe, add an additional 3 minutes to the baking time.
Notes:
I find this recipe without banana can be slightly bitter due to the high cocoa content. Adding banana add moistness and makes it more-ish.
I substituted 1 cup of oats with coconut powder because chocolate and coconut are best friends. To make coconut powder I blended dessicated coconut.
You can sprinkle a teensy bit of salt over the balls just before baking.
